Sweet potatoe chocolate ice cream

Yes, no kidding. I made it up and it was proper nice. Creamy, smooth flavour. It made me happy that I have some healthy version of dairy free ice-cream or shall I say veggie-cream for all the eczema sufferers out there and my vegan friends!

Ingredients to make 4 generous servings:

2 boiled sweet potatoes

to make lighter peanut butter flavour:

1 tbsp of peanut butter

1 tbsp of honey

1 boiled sweet potatoe

1 tsp of cacao

120ml of nut milk

Method: blend it all together, check if you like the flavour and freeze in the plastic container. I used silicon moulds

to make rich dark chocolate flavour

2tbsp of cacao

1 boiled sweet potatoe

1tsp of cinnamon

120ml of nut milk

Method: blend it all together, check if you like the flavour and freeze in the plastic container. I used silicon moulds

They should be ready withing couple of hours, best served straight from the freezer, you could sprinkle them with coconut flakes or some cranberries or raw cacao sauce or eat plain.
