The essential winter recipe

Autumn and winter mean soup season for me. I want warming, comforting, and simple meals.  I want the leek and potato soup!

I made one and the recipe was SO good and easy that I wanted to share with you

 

Serves 4

Ingredients:

3 leeks

6 medium size potatoes

1 small onion

2 cloves of garlic

Some salt, pepper

2 tbsp of butter

1 tbsp of best quality miso (I choose miso over veg stock for its health benefits )

 

Preparation:

Finely chop the onion, garlic and saute until golden, add chopped leeks and thinly sliced potatoes. Saute it all together with the butter until crispy, then add some water, spices, lower the heat, cover and boil until potatoes are soft.

Cool off and blend in the food processor. Serve with some finely chopped greens and/or slice of toasted (gluten free) bread
